Newfangled Vichysoisse

Like my musical appetite, my tastes in food are quite varied. I do my best to at least try everything once–quite an accomplishment given my vegetarian roots. Most things I like enough to try again. But there are a few dishes that just do not work for me.

I have an aversion to the knish, which is tragic given that I lived around the corner from Yonah Schimmel for a good chunk of my 20s. It is the rare gnocchi that turns my crank. The joy of a tamale has also proven elusive, though I did have one last year that made me rethink this stance. (It hailed from East Williamsburg and was stuffed with a generous portion of spicy cheese.)

I am not a big fan of starchy things, it seems. And if you must be starchy, you best not be bland.

CSA season is off to a slow start–no surprise given the miserable winter we had. The Sunday before last, in anticipation of my first pickup, I giddily cleared out my crisper by whipping up a massive batch of potato salad. Two days later, I collected lettuce, asparagus, leeks, beets, carrots, scallions and…more potatoes. Tonight’s share felt more springlike, with cucumber, cilantro, baby bok choy and sugar snap peas joining the asparagus, lettuce and leeks.

As I loaded my vegetables into the crisper, I was ashamed to realize that I hadn’t made a dent in last week’s storage crops. Compounding matters, I now had four giant leeks taking up the space normally reserved for beer.

Potatoes and leeks. The obvious choice is vichysoisse. But, being starchy and not particularly flavorful, this cold potato and leek soup doesn’t hold much allure for me. To quote Kanye: “We can make it better.”

Newfangled Vichysoisse

  • 3 tablespoons butter
  • 4 large leeks, white and light green portions chopped and thoroughly rinsed
  • 2 garlic scapes, sliced
  • 4 large potatoes, peeled and cubed
  • 8 cubes frozen concentrated chicken stock or 1 quart chicken stock of your choice
  • 1 bay leaf
  • 1 pinch nutmeg
  • 3 tablespoons absinthe 
  • 1 cup good quality whole milk yogurt
  • salt
  • black and white pepper
  • chives for garnish
  1. Bring a large pot up to medium-low heat. Add the butter. When the foaming subsides, add the leeks and cook stirring regularly until limp and translucent (about 10 minutes), taking care not to let them brown. Add the scapes and cook for a few more minutes. Add the potatoes and continue to cook for a few more minutes. 
  2. Add the chicken stock, bay leaf and enough water to just cover the potatoes. Bring to a boil. Reduce the heat, pop a lid on and allow to simmer for 30 minutes or so until the vegetables are quite tender. 
  3. Fish out the bay leaf. Add the absinthe, nutmeg, a generous pinch of salt, and plenty of black and white pepper. Pop the lid back on and simmer for another 5-10 minutes. 
  4. Remove from heat and add several ice cubes to cool your soup down and thin it out a bit. When cool enough that you are unlikely to cause injury, add the yogurt and purée using an immersion blender or in batches in a standard blender. Taste and adjust seasoning with additional salt and pepper.

If lunch is a distant memory, you can eat your Newfangled Vichysoisse lukewarm or even hot, but this soup really shines when served cold. (Just remember that, as with most cold foods, it may need more salt.) Either way, be sure to garnish with a generous sprinkle of snipped chives. I bet some rye croutons would be awesome too.

Five-Spice Spare Ribs

Greetings from Heathrow Airport, where I am having my first encounter with the wonders of Business Class travel.

It was an excruciating flight across the pond. Sheer exhaustion, a couple of stiff cocktails and Led Zeppelin IV enabled me to sleep through takeoff and the first hour of flight. But that left me with seven hours in which to watch mediocre movies, obsess about my physical discomfort, and make frequent trips to the restroom so as not to feel trapped.

A travel mishap found my stepdad ponying up some of his precious miles to ensure that I made it to Paris in time to start a two-week study trip. It seems that steerage was all booked, so I will be flying Business Class for the second (and, sadly, much shorter) leg of my travel. I knew this meant a bigger seat and complimentary on-board cocktails, but had no idea about the perks at the airport.

The transfer between terminals involved approximately a mile of walking and a 15-minute bus ride through the back end of the airport. I arrived at the Air France counter tired, hungry and more than a bit cranky. The woman I handed my passport to didn’t appear any happier–until, that is, she pulled up my name and discovered that I was (for this brief moment in time) a member of the elite. Within minutes, I was stepping through the discrete frosted doors of the Sky Club where they greeted me warmly and booked me for a complimentary facial. I had debated grabbing coffee and a lackluster baked good in the terminal, but it turns out there’s a full buffet breakfast, an espresso machine, and Bloody Mary fixings here in the Sky Lounge. There are sleek and clean bathrooms, all manner of comfy chairs, and a wall of moss, ferns and ivy that is doing wonders for my respiratory system.

Having knocked back a latte, a cappuccino, two glasses of cucumber-infused water, half a Bloody Mary, and a proper English breakfast (beans!), I thought I’d take a little time to update you, dear reader, on my progress on that fridge full of fresh produce. As previously reported, Saturday started with a Greek-Style Kale Salad. For my midday meal, I topped the slightly-past-their-prime figs with more of the goat milk yogurt and some flowering thyme.

I spent the afternoon running errands while some ribs left from last season’s Lewis Waite Farm Carnivore Share spent their time marinating in preparation for a farewell feast. Louis arrived a little after 8:00 bearing Prosecco, Chardonnay and a Zinfadel that, I am ashamed to confess, we did not even crack. By 8:30 we were sitting down to a delightful meal of five-spice spare ribs, stir-fried bok choy with scallions, and rice cooked with ginger and shiitake mushrooms.

Five-Spice Spare Ribs

  • 1 rack pork ribs (approximately 1.25 pounds)
  • 1/2 cup mirin
  • 1/4 cup tamari or soy sauce
  • 1/4 cup white wine vinegar (Rice wine vinegar would be good, but I seem to have run out.)
  • 2 tablespoons Sriracha
  • 2 tablespoons five spice powder
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon cayenne
  • 4 cloves garlic, finely minced
  • 1 tablespoon minced fresh ginger
  • small handful of roughly chopped scallion greens
  • black pepper
  1. Cut the rack into individual ribs by running a knife between the bones. Combine the rest of the ingredients in a shallow baking dish and submerge the ribs in this marinade. Cover with plastic wrap and let sit in the refrigerator for at least eight hours, flipping the ribs to ensure even penetration. 
  2. Pre-heat oven to 325, remove plastic wrap, tent ribs with foil and pop in the oven. Let cook for one hour, then remove the foil, flip the ribs, and let cook for another hour. At this point, your marinade should be starting to thicken. Remove the ribs to a covered serving dish to keep warm. Pour the marinade into a small container and simmer on the stove top until it is the consistency of barbecue sauce. Drizzle this over the ribs and serve.

The next morning I converted the leftover rice into fried rice with swiss chard, scallions and egg.

Later that afternoon, I polished off a head of romaine, half a cucumber that had been hiding in the crisper and the rest of the scallions with a dressing made from the last of the goat milk yogurt, garlic scapes and whatever fresh herbs I still had on hand. Some canned sardines–stockpiled for just such a purpose–rounded out the meal.

Just before leaving for the airport, I admitted defeat and delivered one last bunch of kale to my neighbors. No vegetables get left behind!

A Recipe for Recovery

I just got back from South Florida where I spent Thanksgiving with my family. I tacked a couple of days in Miami Beach on to the end of my trip. I was looking forward to checking out the Miami dining and cocktailing scene–as well as the swanky pool at my hotel. Instead, I contracted food poisoning and spent the next 36 hours checking out the pay-per-view selection and the marble-tiled bathroom floor. (While there a few suspects, my money is on the peel-and-eat shrimp.) When I did manage to drag myself to the balcony, this is what I gazed upon.

I made it through last night’s plane and taxi rides without incident, but still felt the need to sleep with a bucket next to the bed. I’m in that awkward stage of recovery when the thought of food nauseates me but so does an empty churning stomach. White toast, white rice, white pasta or Saltines would probably be advisable, but these are not things I keep around and going to the store seems unthinkable at the moment.

As luck would have it, I did have the ingredients below–all of which are easily digestible and/or possess restorative properties. The inspiration came from Blue Hill Yogurt, which is very popular with a certain one-year-old friend of mine.

Tahini-Squash Yogurt (aka Sophisticated Baby Food)

  • 1 small delicata squash (I imagine butternut or any number of other winter squashes would work nicely.)
  • 2 tablespoons tahini
  • 2 tablespoons maple syrup
  • 1 cup plain yogurt (I used goat, but any kind would do, so long as it has the good bacteria.)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • pinch of salt
  1. Core, peel and slice the squash. Steam until tender.
  2. Puree the squash plus the rest of the ingredients in a food processor. You could get fancy and run this through a chinoise to remove any fibrous squash matter. It was all I could do to pour it into a bowl.

Dog Day Salad

It was 95 degrees when I arrived for tonight’s 7:00 CSA work shift. We checked members off on a list, restocked vegetables and loaded the unclaimed food into a car for transport to a local food pantry. As it happened, all four of us were nonprofit workers, so we talked shop–and sweat. By 8:30, we said our goodbyes and headed off in search of air conditioning, dinner and (at least in my case) a cold beer.

My tote contained my weekly share of red and yellow tomatoes, scallions and more of those delightful cucumbers. In the fridge at home I had some fresh dill and Greek yogurt left over from this past weekend’s Russian extravaganza.

Dog Day Salad

1 large cucumber, seeded and diced
2 large tomatoes, diced
3 Tbsp fresh dill
3-5 scallions, minced
2 ounces crumbled feta or farmers cheese
1/4 cup Greek yogurt
1 Tbsp creamy Dijon mustard
1 Tbsp olive oil
2 Tbsp white wine vinegar
Pinch of salt
Fresh-ground black pepper
Juice of 1 lemon

Crack open a cold beer. Toss the above ingredients together in a small mixing bowl, taking swigs of the beer as needed. If you’re not starving, chill this in the fridge for a bit. If it’s all you’re eating, you might want to toast some whole wheat flatbread, tear it up into bits and mix it right in.

I found that this paired well with a Dogfish Head Raison D’Etre and Dog Day Afternoon, which is one of my all-time favorite movies. Make this salad or not; I don’t really care. But, if you’ve never seen Al Pacino in his prime, do yourself a favor.

Pretty in Pink Borscht

Last week’s CSA share included a handful of beets. I knew they would keep until this week, when I had a hunch I’d be getting some more. Sure enough, Tuesday brought another bunch–along with some of the crispest cucumbers I’ve ever tasted.

That very day, NPR reported that this is the hottest summer on record in the U.S. Roasting the beets was out of the question.

But cold borscht was not. I boiled my beets and eggs while preparing my morning coffee and a garlic, beet greens and egg scramble that I ate with a sliced fresh tomato–the first of the season! With the hot work completed early in the day, dinner preparation would really just be a matter of assembly.

Cold Borscht (serves about four)

  • 2 bunches beets (greens reserved for a nice sauté)
  • 2 Tbsp red wine vinegar
  • 4 garlic cloves
  • 1 large onion
  • 3 cloves
  • 2 whole allspice
  • 1 bay leaf
  • 1 tsp coriander seed
  • ½ tsp fennel seeds
  • 1 tsp pink peppercorns
  • 1 tsp green peppercorns
  • 1 tsp crushed red pepper flakes (or more if you like a little heat)
  • 1 Tbsp sugar
  • 2 tsp salt (and more to taste)
  • 2 Tbsp prepared horseradish (or to taste)

Clean the beets by soaking them in water and scraping off any lingering dirt. (I recommend using the edge of a teaspoon; three days and a few showers later, I am still trying to dig dirt our from underneath my thumbnail .) Trim the tops, bottoms and any rogue hairy stuff. Add these along with everything above except the horseradish to a large pot, cover with water and bring to a boil. Reduce to a simmer and cook until your beets give easily when pierced with a fork (somewhere between one and two hours). Remove beets and strain liquid into a bowl using a chinoise or other fine mesh sieve. Once beets have cooled, slip peels off with your hands. Add all but one of the beets, reserved liquid and horseradish to the work bowl of your food processor and purée until smooth. You may need to add more water to get the desired consistency. Pour mixture back into the bowl and refrigerate for at least a few hours. (A full day would be fine.)

  • ¼ cup crème fraiche, sour cream or plain yogurt
  • Black pepper
  • 1 cooked beet, diced
  • 4 hard-boiled eggs
  • 2 Tbsp minced dill plus more for garnish
  • 1 large cucumber, peeled, seeded and diced

Whisk minced dill and crème fraiche, sour cream or plain yogurt into soup and season to taste with fresh-ground black pepper, salt and/or vinegar. Ladle soup into bowls, garnishing with halved eggs, beet and cucumber cubes and sprigs of dill.

It turned out that these were Chioggia beets, which were breathtakingly beautiful, though the dramatic stripes faded a bit during cooking and, ultimately, made for a borscht the color of Molly Ringwald’s prom dress at the end of Pretty in Pink. (Am I alone in having found that dress rather disappointing after all of the buildup?)

Still, it was damn tasty. I served it with a kale, sugar snap pea and pickled red onion salad and toasted pumpernickel bread topped with a crème fraiche spread and some killer smoked salmon that I’d picked up from Josephson’s Smokehouse in Astoria, Oregon. (Astoria is the town where Goonies was filmed, which makes for two ’80s movie references in a single blog post.)

An earthy rosé rounded out our feast, though I suppose that vodka would have been more traditional.


Summer Solstice Salad

Yesterday was the summer solstice. Here in New York City, we hit 97 degrees though it apparently felt like 102. Con Edison warned of likely power outages. My coworkers and I did our part by working with the lights off, which had a calming effect on an otherwise nutty day. I worked late, but it was still steamy by the time I got off the train in Brooklyn. It was 8:00 and I was hungry, but there was no way I was creating any more heat in my stuffy apartment.

Summer Solstice Salad

1 scape, thinly sliced (shallots, garlic and red onion would all work here)
1 tablespoon Greek yogurt
2 tablespoons red wine vinegar
1 tablespoon good quality olive oil
Juice of 1/2 lemon
1 teaspoon dried oregano (fresh would be even better, as would Italian flatleaf parsley, chives, etc.)
Pinch sugar
Fresh-ground pepper
1 can chickpeas, rinsed and drained
1 sweet red pepper, minced

  1. Combine all but the last two ingredients in a jar and shake vigorously. Then combine with the chickpeas and red pepper in a bowl.
  2. Now root around the fridge and pantry and see what you’ve got. I had some red leaf lettuce, baby heirloom tomatoes, feta and oil-cured olives. Hearts of palm or artichoke hearts would have been an excellent contribution from the pantry.
  3. Pack half of your lightly marinated chickpeas away for a future snack, toss everything together in a wooden bowl, and grab a fork. I find that salad for one is best eaten directly out of the bowl.

Midway through my meal, there was a gentle rap at the door. I grabbed my trusty wooden bowl and the remaining strawberries and joined my neighbors on the roof. The sun was just finishing its descent and there was a cool breeze in the air. Wine was poured. Plants were watered. Berries were eaten. And thus concluded the longest–and perhaps hottest–day of the year.
